Tonight was a hurry up and get to it, then crash kind of night. Spence and I both had long, full weeks and the best of intentions for a fun Friday date night, but life happened while we were making plans and it ended up being for the best. Hungrrrrryyy, food and quickly while still remaining healthy and keeping it in for the night was the turn of events. I love a fridge challenge.
We had, 1/4 chicken that needed to be used.
A package of tortillas, or as Spencer likes to refer to them as "burrito skins"- which came from Rawn apparently. (per the discussion happening while I am trying to compose this.)
1 jar kimchi
1 head napa cabbage
assorted condiments and stuffs
And the Korean Burrito is Born!
Sauce for the chicken, which in it's original form is rather bland.
2 Cloves Garlic
1 tbs soy sauce
1 tbs coconut oil
1 tsp sesame seed oil
1 tsp chili paste
add all ingredients into a small sauce pan and simmer for 5-7 min
chop up the chicken and toss in the pan with the sauce.
chop the napa cabbage and toss in a large bowl with kimchi
heat the burrito skins in the micro for 40 seconds to make them pliable
add in a large amount of the kimchi/napa mix and spoon on the chicken.
wrap up in a bundle and enjoy with a sigh of relief, it is Friday after all.
