Black Bean Soup, warms the soul
It's the bitter end of winter and the weather can't make up it's mind. I needed a bit of warmth that spread from within. Enter black bean soup. Hearty, heart healthy and oh so good.
Black Bean Soup:
6 c cooked beans - this can be canned, or your own sprouted, cooked beans.
4 c stock / broth, veggie, chicken, beef. water with a bullion cube works well too.
1 green pepper diced
1 onion diced
4 cloves garlic finely chopped
4 ribs celery finely chopped
1 tsp chili powder
1 tbs salt
1tsp adobo
1/2 c tomato paste
smash the beans, sauté the veggies, add the spices, stir, add the stock, simmer, add the beans , stir. Bring to a gentle simmer. Serve with shredded cheese.
Enjoy with friends, but really close friends, or eat quick and vacate. It's a dangerous fruit.
