for later

I made an amazing corn salad and mashed potatoes for dinner later tonight, but didn't have the forethought that I would be posting about this so there are no pics.

Zucchini Corn Salad:
2 small zucchini's diced
1 medium onion, diced
2 cloves garlic minced
1 tsp cumin
1 tsp coriander
1/2 tsp chili pepper crushed
4 c whole kernel corn (fresh or frozen)
2 tbs olive oil
1 jalapeno minced
sauté all ingredients in a medium pan until desired done-ness, note, if saving this for re-heating later, you may want to reserve the last few minutes of cooking time for the re-heat.

Mashed Potatoes:
2 lbs small red skinned potatoes
2 cloves garlic, crushed and cooked with the potatoes in boiling water that's been salted.

1/2 pkg cream cheese
1/2 stick butter
2/3 c whole milk
1 tsp fox point seasoning
dash fresh ground black pepper
 smash, smash, smash and combine.

enjoy with family later tonight.
