Trying to have out with the old before I usher in the new grocery bags and market goods. All the things that were beginning to grow and fading fast needed to go and my fear of wasting things wouldn't let me just let go.
Curry:
4 sweet potatoes cubed
1 vidalia onion diced
3/4 c red lentils
1 tbs red chili paste
2 tbs miso paste
2 c water
2 tbs olive oil
2 cloves garlic
olive oil in the bottom of a 3 quart pan, sauté the onions until they start to get golden
toss in the rest of the ingredients and pour the water over it, let it simmer for 20 min.
Make a pot of rice.
Side salad of greens, fresh market tomatos tossed with olive oil & rice vinegar.
MMMmmmmmm. Turned out better than it sounds. I topped it with curry kale chip crumbs, good texture.
