Independence


Fun food for the 4th. Here's a festive salad that will beat the heat and be a burst of color & flavor for any & all.

Miso Shitake Corn Salad:
4 ears corn, shucked, and cut off the cob
1 cup shitake shrooms, sliced in thin strips
1 onion, small dice
1 zucchini, more for some color than anything
4 cloves garlic
1 lemon juiced
2 tbs miso paste
2 tbs olive oil
1 tsp chili powder
1 tsp salt

All ingredients in pan at once, stir, caramelize, make love, not war, but what are we fighting for? I dunno anymore. Serve at whatever temp it is in your current surroundings, it's good any which way.
