Fireworks ~ Explosions

SO, cooking + rushing = kitchen disaster. Trying to make it to Baileys in time for pre-4th fireworks and leaving work late was a disaster. I was in charge of cole-slaw & cookies, I know, a strange combo, but it worked with the rest of the menu. Anything in my kitchen involving more than 2 ingredients requires some sort of degree in balancing and magic, neither of which I posses. So, I blew up a brand new 2 lbs of granola off the top of the fridge. Ah well, the casualties of genius. Now for the stars of the show.

Cole Slaw Southern Style:

1 head crisp cabbage, shredded in thin slices
2 carrots thinly grated
1 bunch scallions, thinly sliced
1/2 c DUKES Mayo, don't bitch, you know it's good
2 tbs rice wine vinegar
1/2 tsp salt
pepper to taste
1 tbs mustard
1 tsp chili pepper flakes
dash cayenne powder
2 tsp sugar

blend all the non veggie ingredients together in a large bowl until well combined. Then add all the cut veggies. Mix well. Enjoy with company and someone else's hot coals and BBQ and a good dose of Spicy Lemonade... Vodka, Lemonade, chili powder, seltzer water. Heavy on the vodka.
