Camp

Makin' food for camp! Mojo Chicken awaits as do friends and fun times. I am complimenting the chicken with tres amigos, Pico, Guac and frijoles rojos y arroz. Nom.

Guac:
2 avocados
1/3 red onion diced
1 jalapeno, itty bitty dice
2 cloves garlic, pulverize
1 lime juiced
salt
1 tbs olive oil
pepper
cumin
coriander

smash, stir, mix and blend all of the above ingredients to your desired consistency and enjoy with a fresh bag of chips  

Pico:
1 large tomato, small dice

1/3 red onion diced
1 jalapeno, itty bitty dice
2 cloves garlic, pulverize
1 lime juiced
salt
1 tbs olive oil

toss together and again with the chips

frijoles rojos y arroz:

2 c rice, brown short grain, prepared with a rice cooker. This is magic which we have already spoken, I need not cover this
2 cans red beans, goya is good, strained and rinsed
2 cloves garlic, crushed and put in with the rice to cook
1 can tamale sauce
2 tbs sun dired tomato paste

chili powder
cayenne pepper
1 bunch scallions finely sliced for color and flavor burst finish








cook the rice, put the rest in a bowl, pour the hot rice over, mix well and enjoy with good friends and Puerto Rican Slurpies.
