It's BACON!

Suppertime plans thwarted by a trifecta of lack of energy, lack of gas for the grill and thunderstorms. Sooo we brought it in for the night and prepared it a bit differently. It still tasted just as amazing.

Bacon Chicken:
Trader Joe's Ends & Pieces Bacon, thick and amazing
Dark Meat Chicken, Thighs are perfect
fry together in pan until tender. Yup, that's it.

Fennel, scallion & leeks:
chopped fennel, scallions and leeks
2 tbs olive oil
1 hot skillet
S&P to taste
cook until tender and barely browned

serve with garlic nan

desert, toasted angel food cake with honey figs.








Just what I needed for the evening. That and some down time listening to the rain with my husband and fuzzy babies. The gigantic glass of pinot doesn't hurt either.

Amber Sunset

I am loving this amber color lately. Anything with a dark, saturated, eggy rich color is really catching my eye. Perhaps it's the longing to extend the summer that passed too quickly. Perhaps it's my propensity for sunsets. Whatever it is, I really can't get enough of this.

Nacho Typical Tuesday

I love a good pun. I made quick work of the random bits and pieces that were in the fridge from the two crazy weeks that I have been traveling. What I got, nachos.

3 bags random leftover bits of tortilla chips - total 4 cups-ish
4 peppers I have no clue what kind, but they were peppers
2 leeks - I was out of onions and they were there
1 random sausage diced
1 tomato diced
1/4 head lettuce chopped
1 avocado diced with the juice of one lime on it for flavor and anti-browning
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp salt
1/2 can refried beans in bits
2 c shredded cheddar
(yes, I really had all this crap in my fridge after 2 weeks being mia from the house and grocery store. I also made 4 c carrot, apple, ginger juice & a greek salad for lunch tomorrow.)

sauté all of the peppers and leaks, spices and salt, if you have garlic, it would be a good idea to use, if not, well you are in the same position as I am and it's gona be that much less awesome.

while those are cooking up, spread out your stale ass chips on a cookie sheet and don't worry, enough cheese and 450 degree heat will make the stale disappear.

Dice the sausage up and sprinkle over chips.









Dice the tomato, avocado and lettuce and place in separate bowls for post-oven toppings.

After 15 min of sautéing take the mixture and spread over the chips and sausage. Sprinkle the shredded cheese over evenly and cook for 15 min in the oven.

Enjoy this fun junk food dinner pre movie/date night with long lost husband & a coke.

Two Days in One

So, I am making up for lost time here. Yesterday was a whirlwind, two states, friends, family and Ikea. Eesh. So I am doubling up since I had absolutely no time yesterday to create anything other than a laugh.

This morning was welcomed with some hot French Toast with pomegranate jam thanks to Ellie.
 1/2 loaf French bread, a good couple of days old makes it better, a bit dry = more room to soak up the batter. Sliced thick.

4 eggs
1 c half & half
1/2 tsp each - cardamom, cinnamon, ginger, powdered.

1/4 stick butter

1 hot pan

Whisk all but the Bread & Butter.

Place the slab of butter in the hot pan, let melt and get just brown while you soak the bread in the batter.

place the now soaked bread in the hot pan and cook until golden brown on both sides, adding pats of butter as necessary.

Serve hot with honey crisp apple slices and pomegranate jam on the top. OHMYGODSOFREAKINGGOOD.









Then Tiffany gave me a magical mystery box this evening full of goodies that I can't remember life without. I love spare, lost, unloved/wanted jewelry parts. Here's a pendant out of a tangled hot mess of a necklace.
